Tried a new recipe lately?


I made this on Sunday evening to go with Tri-tip and a big salad. This was the hit of the night. (Recipe courtesy of Better Homes and Gardens New Cook Book)

Scalloped Potatoes with Cheese (oven 350)

Wash and slice 3-4 small-medium potatoes. (Calls for 3 cups but I used a little more, and could have used even more.) Add half of potatoes to a pam sprayed 8x8 pan, set aside...

1/4 cup chopped onion (I used about a 1/2 cup, we're onion people.)
2T. butter (Next time I would use less.)

Combine in sauce pan, cook 'til onions are tender. Add 2T. flour, 1/4 tsp. salt, and fresh ground pepper to taste. Mix well. Add 1 1/4 cup milk. Cook and stir continuously until thick. Remove from heat and add 3/4 cup cheese (the recipe called for shredded American but I used medium cheddar. I'm a rebel like that.)

Pour half of sauce over potatoes already in pan. Layer rest of potatoes, add rest of sauce. Sprinkle 1/4 cup cheese on top, if desired. Cover with foil.

Bake for 30 min. covered. Remove foil and bake 30-35 min. more. (Because Headless Dad likes this stuff well browned I left it in maybe an extra 5-10 min. but that wasn't essential.)

Result was amazing! I thought that scalloped potatoes would be difficult, but I proved myself wrong. So Easy! Next time I would even add garlic for a little extra punch. And don't put too much cheese on the top- 1/4 cup was just enough. This would be easy enough to double (or triple, even) for the next time you had to take a dish somewhere.

Keetha-Tri-tip is a cut of beef, from the shoulder, I believe. Mostly available in the western US, can be cooked like any other roast

Looks good, and I think you need some Tater Mitts. ;)

We saw the commercial for them while watching "I Love Lucy" on TVLand on Sunday, and we all cracked up at how STUPID the commercial was! (Which means I've just offended someone here who loves their tater mitts.... ;D

They look like they would be better as an exfoliator in the shower...

BTW headless, I am just home from school and STARVING to death (well, that's a LIE - - - as overweight as I am I could go more than a month without a bite o food and still be healthy) anyway - - - I'm starving to death and those potatoes are really really really looking good!!!

Googled the Tri-tip.

I've had that/fixed that before - - - I just didn't know it was called a tri-tip.
