So you say you don't like turnips...

As you know, Headless Dad has never met a vegetable that he didn't like. He also has a garden and loves to grow all sorts of vegetables whether we'll eat them or not. Believe it or not, after having this recipe tonight I asked him to plant more turnips. We have found a winner! (Recipe via Pinterest, from the Taste of Home website.)

Scalloped Turnips

3 cups diced, peeled turnips (approx. 2 large turnips)

Put turnips in large sauce pan with water and 1 teaspoon sugar, bring to a boil. Once boiling, cook for 5-8 minutes.

While turnips are cooking, add to a second sauce pan:
2 Tablespoons butter, heat until melted. Add:
3 Tablespoons flour, mix well until smooth.
Add 1 1/2 cups milk, gradually, until boiling. Cook for 2 minutes until thick.

Drain Turnips. Add to sauce. Mix well and add to casserole dish. Top with 1/2-1 cup of shredded cheddar cheese. Bake at 350 for 20 minutes or so.

My thoughts for next time: I would use sharp cheddar cheese for a slightly tangier taste. I will also add sliced green onions next time while mixing the sauce and turnips before adding to casserole dish. The original recipe says that you could use 2 Tablespoons of parmesan cheese instead of cheddar. I think that there are many additions/changes you could make to this. It's super easy and like I said, we will definitely make it again!

I can not eat a turnip, it just brings me back to sitting infront of a plate of them at my grandparents house and them giving me that look that says "you can't not like them"
