Last week I was out of ideas for dinner. Luckily the week before I had grabbed a box of Orange Chicken at Costco (frozen, with it's own sauce packets.) I decided to make the chicken (in the oven,) heat the sauce, make rice and attempt to stir fry vegetables. I'd never made them on my own before (I know!), so off I went to grab some veggies. As you can see from the photo I used:
baby carrots, quartered lengthwise
baby bok choy, halved
water chestnuts, 8 oz. can
baby corn, 14 oz. can
broccoli florets, from one bunch
diced red onion
coarsely chopped celery, about 2 stalks
about 2 tsp. minced garlic
I sauteed all of the above in sesame oil for about 15-20 min., covering periodically to keep the steam in the pan. (I didn't want to use any other sauce because the included orange sauce is very strong, and I was afraid of the flavors not mixing well.)
Verdict? Yum! I will definitely make this again, but in smaller quantities...I've been eating leftovers for days. (Which isn't all together a bad thing, considering that I don't really like sandwiches for lunch. But I digress...) Headless Dad particularly loved the bok choy and the broccoli-they came out crunchy/tender, just like I'd hoped it would. The other thing that was great about this dinner is that the chicken was 'all natural'-no msg, high fructose corn syrup, etc., so I had no qualms about buying it or feeding it to my family. It did have a breading, but it was light in comparason to some that I've tried. I also loved that the whole thing can come together in about the time that it takes to cook the rice in a rice cooker: 20-30 min.

That looks yummy. So glad you gave us a picture. Back in the day when I USED to cook, I sometimes made stir fry somethings - - - - but that was a LONG time ago.

i made beans and rice the other day and my 13 year old asked if we could have veggies and rice sometime. poor kid...has to ask for veggies. it's not like i don't ever make them, but lately we haven't been having them as much. i'm totally going to do this!
