Pinterest Win! Hawiian Meatballs Recipe

To borrow a phrase from the Crockpot Lady, Stephanie O'Dea, I have an unhealthy love for my crock pot. I love slow cooked meals- they are typically tasty, inexpensive, and super easy to prepare. I would honestly cook in it nearly every day if I could. "If I could" refers to that other adult that lives in my house that prefers meals to have a meat, starch, and a green vegetable. I won't name any names, but someone gets kinda cranky if that doesn't happen on a regular basis. So I try to rotate the types of things that we eat so everyone gets what they want. And you wonder why I tear my hair out every day when I have to figure out what I'm cooking. Oy.

I found this recipe from Six Sister's Stuff on Pinterest. (Click for the original recipe. I've added my modifications below.)

Hawaiian Meatballs

40 oz package of frozen meatballs
20 oz can pineapple chunks, drained, reserve juice
1/2 white onion, chopped
1 bell pepper, chopped (I used an orange pepper but you could use any color I think.)
1/2 cup brown sugar
2 T corn starch
2 T (plus an extra shake or two) Soy Sauce
Splash of orange juice, if needed
1 bag frozen peas

Put in slow cooker: meatballs, pineapple, onion, and bell pepper. Stir together: reserved pineapple juice, brown sugar, corn starch, and soy sauce. Add splash of orange juice if needed. (I added about 1/4 cup because it didn't look like enough liquid. It ended up being perfect.) Add peas for the last 30 minutes of cooking.

Cook on high for 2-4 hours or low for 6 hours. Serve with rice.

My family LOVED this. Even the picky meat person liked it, so this one will for sure stay in the rotation. The sauce was perfectly sweet, even though I cut the sugar in half, but not too sweet to over-power the meatballs. So, so tasty. And at this quantity I'll have lunch for at least a day or three!!

That sounds so good! We'd have to save it for Sunday Dinner, though, because my husband doesn't eat carbs (except vegetables) the rest of the week. Otherwise it sounds perfect for a busy weekday.
