Sorry I don't have a picture of this one but trust me, it's good!
Strawberry Bread
3 cups flour
1 tablespoon baking soda
1 tablespoon salt
3 tablespoons cinnamon
1 1/4 cups vegetable oil
2 cups sugar
3 well beaten eggs
2-10 oz. packages frozen sliced strawberries, thawed
1 cup chopped nuts (optional, I didn't use any)
Mix all dry ingredients well. Add eggs and oil, mix until well moistened. Stir in strawberries. Pour into 2 greased and floured (or sugared) loaf pans. Bake at 350 for 1 hour. (I used one regular loaf pan and 4 mini loaf pans. Remove mini loaves after 40 minutes or when toothpick comes out clean.)
FYI-sometimes the middle of these loaves fall. Don't worry, it's still good. I actually give them as gifts anyway. Dollars to donuts it will be the only Strawberry Bread any of your recipients gets!
