Seeking Advice: Lunch

It's lunch time around these parts and yet again I'm stumped.

You see, I hate sandwiches with a burning passion. I'm ok with leftovers but we don't always have them. I hate to spend money on Hot Pockets and the like because they are ridiculously expensive and I'm cheap.

Help me out, gang. What do you eat for lunch? I'm open to suggestions!

I don't normally think about lunch but since I'm dieting I am trying to eat 3 meals a day. What I am loving are the veggie packages in the salad section the you microwave for 2-3 minutes. That's what I'm having today sprinkled with some parmesan cheese! Wish I could send some over to you.

If you like Hot Pockets you can make your own: Just use rolled pie crust dough and fill with whatever deli meat and cheese that you like. You can cut the pastry into pieces about the size of a hot pocket and seal it up around the edges for baking, and prick the top with a fork. Bake at 375 til the pastry is golden about 25-30 minutes.

I can't help much, I'm a "sammi" girl myself.

Have you tried making open face sandwiches with CHEESE on top, then pop them under the broiler until the cheese is all bubbly, gooey, and begins to brown??? YUM.

I usually put the bread in first and "toast" the bottom side a bit so it doesn't get very soggy.

Leftovers. Pizza. Salad with chicken. (I buy the frozen Tyson already cooked chicken strips). Soup. Quesidillas. Make your own hot pockets. Meat and cheese roll ups.

Also, if you want to make sure you have leftovers, make a plate for yourself *before* you call everyone to the table. Often, they eat the portion you would have had, and they could be just as happy with one serving + extra fruit + extra veg.
