I can't remmeber when or where I first heard this recipe but I was skeptical. Don't be. These are really yummy!
The original recipe said "Mix one box of cake mix with one can (15oz) of pumpkin. So I did. They were good but really thick. Now, this is what the recipe looks like:
Easy Pumpkin Muffins
1 box spice cake mix (You can also use white or yellow.)
1 15oz can pumpkin
1 or 2 eggs
Mix well. Spoon into muffin cups. Bake at 350 for 20 minutes.
Yield: no eggs= 12 muffins, 1 egg= about 15 muffins, 2 eggs= 18 muffins.
These muffins are moist and will keep for days. Because they are made with a cake mix they are a little sweeter than what I would typically call a muffin, but they aren't as sweet as a cupcake. A great, easy addition to your Thanksgiving morning breakfast!

They are super easy.....I think I made them last year but definitely need to try them again!
